Ingredients

  • 2 ozGin(Preferably a London Dry)
  • 0.5 ozFresh Lemon Juice
  • 0.5 ozFresh Lime Juice
  • 0.75 ozSimple Syrup(1:1 ratio)
  • 1 ozHeavy Cream
  • 1Egg White(Fresh large egg)
  • 3 dashesOrange Flower Water(Essential for the signature aroma)
  • 1.5 ozClub Soda(Chilled, to top)

Instructions

  1. 1Combine gin, lemon juice, lime juice, simple syrup, heavy cream, egg white, and orange flower water in a shaker without ice.
  2. 2Perform a 'dry shake' vigorously for at least 1 minute to emulsify the ingredients and build the foam.
  3. 3Add plenty of ice to the shaker and shake again for 2-3 minutes until the shaker is frost-cold and the mixture is extremely frothy.
  4. 4Strain the mixture into a chilled Collins glass without ice.
  5. 5Let the drink sit for about 1 minute in the fridge to allow the foam to settle and firm up.
  6. 6Slowly pour club soda into the center of the drink, which will lift the thick foam head above the rim of the glass.
