- 2 ozPisco(Peruvian Quebranta is traditional)
- 1 ozFresh Lime Juice
- 0.75 ozSimple Syrup(1:1 ratio)
- 1Egg White(Fresh)
- 3 dashesAngostura Bitters(Used for garnish)
Garnish: 3 drops of Angostura bitters on the foam
Instructions
- 1Add Pisco, lime juice, simple syrup, and egg white into a shaker without ice.
- 2Dry shake vigorously for 15 seconds to create a thick, stable foam.
- 3Add ice to the shaker and shake again for another 15 seconds until thoroughly chilled.
- 4Fine strain into a chilled coupe glass or an Old Fashioned glass.
