Ingredients

  • 2 ozPisco(Peruvian Quebranta is traditional)
  • 1 ozFresh Lime Juice
  • 0.75 ozSimple Syrup(1:1 ratio)
  • 1Egg White(Fresh)
  • 3 dashesAngostura Bitters(Used for garnish)

Garnish: 3 drops of Angostura bitters on the foam

Instructions

  1. 1Add Pisco, lime juice, simple syrup, and egg white into a shaker without ice.
  2. 2Dry shake vigorously for 15 seconds to create a thick, stable foam.
  3. 3Add ice to the shaker and shake again for another 15 seconds until thoroughly chilled.
  4. 4Fine strain into a chilled coupe glass or an Old Fashioned glass.
