A sophisticated Korean twist on the classic sour. This cocktail highlights the natural creaminess and subtle lactic tang of Makgeolli, balanced by bright citrus and the clean finish of Soju.

Ingredients

  • 3 ozMakgeolli(Fresh, unpasteurized if possible)
  • 1 ozSoju(Premium grain soju recommended)
  • 0.75 ozFresh Lemon Juice
  • 0.5 ozSimple Syrup(Adjust to taste)
  • 1Egg White(For a rich, frothy head)

Garnish: Three drops of Angostura bitters swirled into the foam

Instructions

  1. 1Combine all ingredients in a shaker without ice.
  2. 2Dry shake vigorously for 10-15 seconds to create a thick foam.
  3. 3Add ice and shake again until well-chilled.
  4. 4Fine strain into a chilled coupe glass.
