A modern classic created by Sam Ross at Milk & Honey in New York. The Penicillin masterfully balances the spicy bite of ginger and honey with the sharp citrus of lemon, all topped with a signature smoky Islay Scotch aroma.

Ingredients

  • 2 ozBlended Scotch Whiskey
  • 3/4 ozFresh Lemon Juice
  • 3/4 ozHoney-Ginger Syrup(Equal parts honey and ginger syrup)
  • 1/4 ozIslay Single Malt Scotch(To be floated on top)

Garnish: Candied ginger

Instructions

  1. 1Add the blended Scotch, lemon juice, and honey-ginger syrup into a shaker with ice and shake until well-chilled.
  2. 2Strain into a rocks glass over a large ice cube.
  3. 3Gently float the Islay Single Malt Scotch on top by pouring it over the back of a bar spoon.
  4. 4Garnish with a piece of candied ginger.
