Cheongju Martini

A sophisticated East-meets-West twist on the classic Martini that replaces dry vermouth with Cheongju, a traditional Korean refined rice wine. The Cheongju adds a delicate, floral sweetness and a silky texture that perfectly complements the botanical complexity of the gin.

Ingredients

  • 2 ozLondon Dry Gin
  • 1 ozCheongju (Korean Refined Rice Wine)(A high-quality clear rice wine like Gyeongju Beopju)
  • 1 dashOrange Bitters(Optional)

Garnish: Lemon twist or a dried jujube

Instructions

  1. 1Chill a martini glass or coupe in the freezer.
  2. 2Combine the gin, cheongju, and bitters in a mixing glass filled with plenty of ice.
  3. 3Stir with a bar spoon for about 20-30 seconds until the mixing glass is frost-cold.
  4. 4Strain the mixture into the chilled glass.
  5. 5Express the oils from a lemon peel over the surface and use it as a garnish.
