Champagne Cocktail

One of the oldest and most elegant cocktails, dating back to the mid-1800s. The dissolving sugar cube creates a persistent fountain of bubbles, while the bitters and Cognac add depth and complexity to the dry Champagne.

Ingredients

  • 3-5 ozChampagne(chilled)
  • 0.5 ozCognac(optional but recommended)
  • 1Sugar Cube(white or brown)
  • 2-3 dashesAngostura Bitters(soaked into the sugar cube)

Garnish: Lemon twist

Instructions

  1. 1Place the sugar cube on a napkin and soak it with the Angostura bitters.
  2. 2Drop the soaked sugar cube into the bottom of a chilled champagne flute.
  3. 3Add the Cognac if using.
  4. 4Gently pour the Champagne over the sugar cube.
  5. 5Watch the bubbles rise from the sugar cube and serve immediately.
